Instructions
In a shallow bowl, whisk together pumpkin puree, eggs, and milk until smooth.
Add vanilla, cinnamon, nutmeg, ginger, salt, and optional brown sugar. Whisk until fully combined.
Heat a large skillet or griddle over medium heat and melt a little butter or oil.
Dip each bread slice into the pumpkin custard, soaking 20–30 seconds per side.
Cook soaked bread slices for 3–4 minutes per side, until golden brown and cooked through. Repeat with remaining slices, adding more butter as needed.
Serve immediately with maple syrup, powdered sugar, and optional chopped pecans or walnuts.
Notes
For an extra indulgent touch, serve with whipped cream or a drizzle of caramel sauce. Use thick-cut bread like brioche or challah for best results.
