Instructions
 

Pumpkin Risotto

  • In a large skillet, melt butter over medium heat. Add chopped onion and minced garlic, cooking until soft and fragrant.
  • Stir in arborio rice and cook for a couple of minutes, allowing it to toast lightly.
  • Gradually add broth, one ladle at a time, stirring constantly until the rice absorbs the liquid and becomes creamy.
  • Once the rice is al dente, mix in pumpkin puree and sprinkle with parmesan cheese before serving.

Beef Stew

  • In a large pot, brown the chopped beef on all sides over medium-high heat.
  • Add in the cubed potatoes, sliced carrots, and chopped celery, stirring to combine.
  • Pour in beef broth and add bay leaves. Bring to a boil, then reduce heat and let simmer for about 90 minutes or until the meat is tender.

Apple Cider Pork Chops

  • Season pork chops with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the chops for about 3-4 minutes on each side.
