Ingredients
  

  • 4 medium sweet potatoes, peeled and cut into 1-inch cubes
  • 3 tbsp olive oil
  • 2 tbsp honey (or pure maple syrup)
  • 1 tsp ground cinnamon
  • Salt, to taste
  • Fresh chopped parsley, optional for garnish

Instructions
 

  • Preheat oven to 425°F (220°C). Line a large, rimmed baking sheet with parchment paper.
  • Peel and cube the sweet potatoes into 1-inch pieces for even cooking.
  • In a large bowl, toss the sweet potato cubes with olive oil, honey, cinnamon, and salt until evenly coated.
  • Spread the coated sweet potatoes in a single, even layer on the prepared baking sheet. Do not overcrowd.
  • Roast for 25-30 minutes, tossing halfway through, until sweet potatoes are tender and caramelized on the edges.
  • Transfer to a serving dish, garnish with fresh parsley if desired, and serve hot.

Notes

For crispier edges, avoid overcrowding the baking sheet and roast in a single layer. Flip halfway through for even caramelization.
