Ingredients
  

For the chicken

  • 4 pieces boneless, skinless chicken breasts

For the sauce

  • 1 cup salsa verde
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder

For garnish

  • Fresh cilantro for a pop of color and flavor

Preparation

  • In a slow cooker, place the chicken breasts. Make sure they are evenly spaced for even cooking.
  • Pour the salsa verde over the chicken, then add olive oil, cumin, garlic powder, salt, and pepper. Ensure the chicken is well-coated with the sauce.

Cooking

  • Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender. You can check for doneness by seeing if the chicken shreds easily with a fork.
  • Once cooked, shred the chicken directly in the slow cooker with two forks, mixing well with the salsa verde.

Serving

  • Serve with fresh cilantro on top for added flavor and color.

Notes

For best results, avoid lifting the lid during cooking to keep the chicken moist. You can also add black beans or corn for extra flavor. This dish can be made in an Instant Pot for quicker results. Store leftovers in an airtight container for up to 3-4 days or freeze for about 3 months.
