Preparation

  • In a large skillet, heat the olive oil over medium heat.
  • Add the chicken pieces, season with salt and pepper, and cook until browned, about 5-7 minutes.
  • Stir in the minced garlic and cook for 1 minute until fragrant.
  • Add the sliced mushrooms and herbs to the skillet. Stir everything together.
  • Cook for an additional 5-10 minutes, until the chicken is cooked through and the mushrooms are tender.
  • Garnish with fresh parsley before serving.

Notes

For flavor variation, consider adding a splash of white wine after the garlic. You can also swap chicken for plant-based proteins or use an air fryer for a different texture. Store leftovers in an airtight container in the fridge for up to 4 days.
