Ingredients
  

For the Skillet Dish

  • 2 medium zucchinis, sliced Fresh zucchinis preferred
  • 8 ounces mushrooms, sliced Any variety of mushrooms can be used
  • 2 tablespoons olive oil For sautéing
  • 2 cloves garlic, minced Adjust according to taste
  • Salt and pepper to taste

For Garnishing (Optional)

  • Grated Parmesan cheese For serving

Cooking

  • Heat olive oil in a skillet over medium heat. The oil should shimmer slightly to show it’s hot.
  • Add the minced garlic and sauté for about 1 minute until fragrant. Watch carefully to prevent burning.
  • Add the sliced mushrooms and cook for about 5 minutes, stirring occasionally until they start to brown and release their juices.
  • Next, add the sliced zucchini to the skillet, season with salt and pepper, and cook for an additional 5-7 minutes, stirring occasionally until tender. The zucchini should be bright in color but still firm.
  • Remove from heat and serve hot, optionally topped with grated Parmesan cheese for an extra flavor boost.

Notes

For best results, make sure your skillet is hot enough before adding the vegetables; this helps achieve a nice sear. You can also swap zucchini for yellow squash or add protein like chicken or shrimp to enhance the dish.
