Equipment

  • large mixing bowl (8-quart minimum)
  • Microwave-safe bowl
  • Rubber Spatula
  • gallon-size zip-top bag
  • Large baking sheet
  • parchment or wax paper

Ingredients

  • 4 cups Rice Chex cereal
  • 1 cup green candy melts
  • 0.25 cup creamy peanut butter
  • 0.5 tbsp vegetable or canola oil
  • 0.75-1 cup powdered sugar
  • 0.25 cup green M&Ms
  • 0.25 cup shamrock sprinkles
  • 0.25 cup Lucky Charms shamrock marshmallows

Instructions

  • Place Rice Chex cereal in a large mixing bowl and set aside.
  • In a microwave-safe bowl, combine green candy melts, peanut butter, and oil. Microwave for 30 seconds, stir, then continue heating in 15-second intervals until smooth and fully melted.
  • Pour melted mixture over cereal. Gently fold using broad scooping motions until evenly coated.
  • Transfer coated cereal to a gallon-size zip-top bag. Add powdered sugar, seal, and shake vigorously until fully coated.
  • Spread cereal onto a parchment-lined baking sheet in a single layer. Let set for 15–20 minutes until dry to the touch.
  • Once cooled, transfer to a serving bowl. Add M&Ms, sprinkles, and marshmallows. Toss gently to combine and serve.

Notes

Do not skip the oil—it ensures a smooth candy coating. Allow the cereal to cool completely before adding candy mix-ins to prevent melting. Store in an airtight container at room temperature for up to 1 week.
