Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup mashed bananas
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh strawberries, diced
  • 1 tbsp all-purpose flour (for tossing strawberries)

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  • In a bowl, mix mashed bananas, melted butter, sugar, egg, and vanilla extract until smooth.
  • Gently fold in flour, baking soda, and salt until just combined. Do not overmix.
  • Toss diced strawberries with 1 tablespoon flour, then gently fold them into the batter.
  • Pour batter into prepared pan and bake for 50–60 minutes, or until a toothpick inserted comes out clean.
  • Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use overripe bananas for maximum sweetness and moisture. Tossing strawberries in flour prevents them from sinking. A pinch of cinnamon can enhance the overall flavor.
