Equipment

  • 8x8 inch glass baking dish
  • Large mixing bowl
  • small bowl for glaze
  • Whisk

Ingredients

  • 1 box strawberry cake mix with pudding
  • 2 large eggs
  • 0.33 cup vegetable oil
  • 1 tsp vanilla extract
  • 0.75 cup powdered sugar (for glaze)
  • 2 tbsp strawberry preserves (for glaze)
  • milk (for glaze)

Instructions

  • Preheat the oven to 350°F (175°C) and grease an 8×8 inch glass baking dish.
  • In a large mixing bowl, combine the strawberry cake mix, eggs, vegetable oil, and vanilla extract. Stir until a thick dough forms.
  • Press the dough evenly into the prepared pan and bake for 18–22 minutes until the center is set. Allow the brownies to cool completely.
  • In a small bowl, whisk the powdered sugar, strawberry preserves, and a small amount of milk until a thick glaze forms.
  • Spread the glaze evenly over the cooled brownies and allow it to set before slicing.
  • Slice into 16 squares and serve to reveal the soft, pink fudgy centers.

Notes

Use a cake mix that includes pudding for the best fudgy texture. Allow the brownies to cool completely before glazing so the topping sets smoothly. For stronger strawberry flavor, add a few drops of strawberry extract to the glaze.
