Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups old-fashioned oats
  • 1 cup light brown sugar, packed
  • 1 tsp baking powder
  • 3/4 cup unsalted butter, melted
  • 2 cups fresh strawberries, chopped
  • 2 tbsp strawberry jam
  • 1 tbsp cornstarch
  • 1 tsp lemon juice

Instructions
 

  • Preheat oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
  • In a large bowl, mix flour, oats, brown sugar, baking powder, and melted butter until crumbly.
  • Press two-thirds of the mixture firmly into the bottom of the prepared pan to form the base.
  • Toss chopped strawberries with strawberry jam, cornstarch, and lemon juice until well combined.
  • Spread the strawberry mixture evenly over the base layer.
  • Sprinkle the remaining crumble mixture evenly over the top.
  • Bake for 30–35 minutes until golden brown on top.
  • Allow to cool completely in the pan before slicing into 16 bars.

Notes

For clean, bakery-style slices, chill the bars in the fridge for at least 1 hour before cutting. You can also swap in a mix of berries for a triple berry variation.
