Ingredients
  

  • For the Strawberry Santas
  • 12 large fresh strawberries (uniform size, well-shaped)
  • 1 cup whipped cream cheese (reduced-fat or full-fat)
  • 2 tablespoons powdered sugar
  • 1/4 teaspoon pure vanilla extract
  • For Decoration
  • black decorating icing (for eyes)
  • red decorating icing (for nose)
  • mini chocolate chips (optional, for eyes/nose)

  • fresh mint leaves (for decoration)

Instructions
 

  • Gently wash and thoroughly dry strawberries with paper towels. Any moisture will cause the filling to slide off.
  • Cut off the leafy stem to create a flat base. Then slice each strawberry about two-thirds of the way up to separate the 'body' from the 'hat.' Discard the stem ends.
  • In a small bowl, combine whipped cream cheese, powdered sugar, and vanilla extract. Mix until smooth and thick but pipeable.
  • Transfer mixture to a piping bag with a star tip or ziplock bag with a snipped corner. Use a tall glass to help hold the bag open while filling.
  • Place strawberry bases flat-side down on a platter. Pipe a generous swirl of filling on each base about ¾ inch high to form Santa’s body and beard.
  • Place the smaller top section of each strawberry on top of the filling to form the hat.
  • Pipe a small dot of cream cheese filling on the tip of each strawberry hat to create Santa’s pom-pom.
  • Use black icing for eyes and red icing for the nose, or place mini chocolate chips using tweezers for eyes and nose.
  • Serve immediately, or refrigerate for up to 3 hours. Dust with powdered sugar and add mint leaves for a festive look.
