Ingredients
  

  • 12-15 frozen or homemade potstickers (pork, chicken, or vegetable)
  • 4 cups low-sodium chicken broth
  • 1 tbsp fresh ginger, grated
  • 3 cloves garlic, minced
  • 2 green onions, chopped (plus extra for garnish)
  • 2 tbsp low-sodium soy sauce
  • 1 cup carrots, sliced
  • 2 cups bok choy, chopped
  • 1 tsp sesame oil

Instructions
 

  • In a large pot, bring chicken broth, ginger, and garlic to a simmer over medium heat. Cook 5 minutes to infuse flavors.
  • Add frozen potstickers to the simmering broth. Cook 5-7 minutes, or until tender and floating.
  • Stir in carrots and bok choy. Simmer 3-5 minutes until vegetables are crisp-tender.
  • Season with soy sauce and stir in chopped green onions. Taste and adjust seasoning.
  • Turn off heat and drizzle with sesame oil before serving. Ladle into bowls and garnish with extra green onions.

Notes

For a spicy kick, stir in chili garlic paste, Sriracha, or red pepper flakes with the soy sauce. You can also swap in wontons or gyoza if that’s what you have on hand!
