Ingredients
  

  • 800 g peeled and sliced ripe yellow peaches fresh or frozen
  • 200 g caster sugar see notes
  • 1 tbsp lemon juice to taste (see notes)

Instructions
 

  • Slice the peaches into eighths and peel each slice.
  • Place peach slices in a food processor with sugar. Process until smooth, scraping down the sides as needed.
  • Add lemon juice gradually, to taste.
  • Transfer to a freezer-safe container. Freeze for 6–7 hours or until firm.

Notes

*Don't add all the lemon juice at once — add to taste. It helps brighten and enhance the peach flavor.
The ideal ratio is 4:1 fruit to sugar by weight. For 800g fruit, use 200g sugar. This maintains the correct consistency for freezing. Adjust proportionally if scaling.
