Instructions
 

  • Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease.
  • Peel sweet potatoes and cut into uniform 1-inch cubes. Place in a large mixing bowl.
  • Add olive oil, honey, cinnamon, and salt. Toss well until all pieces are evenly coated.
  • Spread sweet potatoes in a single layer on the baking sheet, leaving space between cubes for even roasting.
  • Roast for 25–30 minutes, tossing halfway through, until sweet potatoes are tender and caramelized on the edges.
  • Garnish with chopped parsley if desired and serve hot.

Notes
