The Ultimate Cheesy Garlic Chicken Wraps

Ingredients
  

For the Chicken and Vegetable Filling

  • 1.5 pounds chicken breast sliced into thin strips
  • 2 tablespoons olive oil
  • 5 cloves garlic minced
  • 1 sweet onion thinly sliced
  • 1 red bell pepper julienned
  • 1 teaspoon Mediterranean herb blend
  • 0.5 teaspoon smoked paprika
  • 1 pinch red chili flakes
  • to taste salt and black pepper
  • 2 cups fresh spinach

For the Creamy Three-Cheese Blend

  • 1.5 cups shredded mozzarella
  • 0.5 cup shredded sharp cheddar
  • 3 tablespoons cream cheese softened
  • 2 tablespoons sour cream
  • 2 teaspoons fresh chives chopped

For Assembly

  • 6 large flour tortillas
  • 1.5 tablespoons butter melted
  • 0.75 teaspoon roasted garlic powder

Instructions
 

  • Season chicken strips with salt, pepper, Mediterranean herbs, smoked paprika, and chili flakes.
  • Heat olive oil in a large skillet over medium-high heat. Cook the chicken until golden and fully cooked. Remove and set aside.
  • In the same skillet, sauté onion and red bell pepper for 5–7 minutes until softened. Add garlic and cook for 1 minute until fragrant.
  • Add spinach to the skillet and stir until just wilted. Return the chicken to the pan and toss to combine. Remove from heat.
  • In a medium bowl, mix mozzarella, cheddar, cream cheese, sour cream, and chopped chives until combined into a creamy blend.
  • In a small bowl, mix melted butter with roasted garlic powder to make the garlic butter glaze.
  • Lay out tortillas and brush one side of each with the garlic butter glaze.
  • Flip tortillas over. On the unglazed side, spread a layer of the cheese blend, then top with chicken and veggie mixture. Sprinkle extra cheese if desired.
  • Fold in the sides and roll up the tortilla tightly into a burrito-style wrap.
  • Heat a clean skillet or griddle over medium heat. Place wraps seam-side down and grill 3–4 minutes per side, until golden and crisp.
  • Let wraps rest for 1 minute, then slice in half and serve immediately.

Notes

For an extra cheesy interior, sprinkle some shredded cheese over the chicken before folding. Great with a side of salsa, sour cream, or guacamole.
