Preparation

  • In a large pot, sauté the onions, carrots, and celery in a bit of oil over medium heat until softened.
  • Add the ground turkey and cook until browned, stirring occasionally to break it up.
  • Stir in the garlic and bell pepper, cooking for another minute until fragrant.
  • Pour in the vegetable broth, diced tomatoes, zucchini, and green beans, stirring to combine.
  • Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-30 minutes, allowing the flavors to meld.
  • Season with salt and pepper to taste, adjusting to your preference.
  • Serve hot, garnished with fresh herbs to brighten the flavors.

Notes

To avoid overcooked vegetables, add heartier veggies like carrots and celery first and the more delicate ones like zucchini later in the cooking process. This soup is perfect for meal prep and can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to three months.
