Ingredients
  

For the Zucchini Bars

  • 2 cups grated zucchini (about 2 medium zucchinis) Use fresh, firm zucchini for the best flavor and texture.
  • 1 cup granulated sugar Adjust to taste.
  • 1/2 cup brown sugar (lightly packed)
  • 1 cup vegetable oil
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour (spooned and leveled) Can substitute with a gluten-free baking blend.
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Optional Toppings

  • 1/2 cup chopped nuts (walnuts or pecans)
  • 1/2 cup chocolate chips

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan or line it with parchment paper.
  • In a large bowl, combine the grated zucchini, granulated sugar, brown sugar, and vegetable oil. Mix until well combined.
  • Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix!
  • If you’re using nuts or chocolate chips, fold them into the batter.

Baking

  • Pour the batter into the prepared baking pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the bars to cool in the pan for a few minutes before transferring them to a wire rack to cool completely. Cut into squares to serve.

Notes

These zucchini bars can be stored at room temperature for up to 2 days or in the refrigerator for up to a week. They can be frozen for up to 3 months. To thaw, simply leave at room temperature or refrigerate.
