  • ¼ cup heavy cream
  • 4 tbsp raspberry powder (from freeze-dried raspberries)
  • 8 oz dark chocolate chips (for coating)

Instructions
 

  • In a microwave-safe bowl, combine white chocolate chips and heavy cream. Microwave in 15-second intervals, stirring between each, until smooth and fully melted.
  • Stir in raspberry powder until fully combined. The mixture should turn a soft pink color.
  • Refrigerate for 10–15 minutes until firm enough to roll but still pliable.
  • Scoop about 1 tablespoon of filling and roll into smooth balls. Place on a parchment-lined baking sheet.
  • In a separate bowl, melt dark chocolate chips in 15-second microwave intervals, stirring until smooth.
  • Dip each truffle into the melted dark chocolate using a fork. Tap gently to remove excess and place back on parchment paper.
  • Refrigerate for 10 minutes to set the coating. Drizzle with extra melted chocolate and sprinkle with raspberry powder if desired.
  • Chill truffles for at least 10 minutes before serving to fully set.
