Ingredients
  

  • 1.5 cups graham cracker crumbs
  • 0.33 cup butter, melted
  • 3 tbsp sugar
  • 1 can sweetened condensed milk
  • 3 egg yolks
  • 0.5 cup key lime juice
  • 1 tbsp lime zest
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 0.5 tsp vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C). Mix graham cracker crumbs, melted butter, and sugar. Press into a baking pan and bake for 7–10 minutes.
  • Whisk together sweetened condensed milk, egg yolks, key lime juice, and lime zest until smooth.
  • Pour filling over the warm crust and spread evenly.
  • Bake for 15–18 minutes until just set.
  • Cool to room temperature, then refrigerate for at least 2 hours until firm.
  • Whip heavy cream with powdered sugar and vanilla until soft peaks form.
  • Spread or pipe whipped cream over chilled bars, slice, and serve.

Notes

Chill thoroughly before slicing for clean bars. Use fresh key lime juice for the best flavor, and avoid overbaking to maintain a creamy texture.
