For the Zucchini Tots

  • 2 medium zucchinis (freshly grated) Squeeze out excess moisture for crispiness.
  • 1 cup shredded cheese (cheddar or mozzarella) For a dairy-free option, use nutritional yeast.
  • 1/2 cup breadcrumbs (gluten-free if desired) Use gluten-free breadcrumbs to ensure suitability.
  • 1/4 cup grated Parmesan cheese Added for additional flavor, optional.
  • 1 large egg Can be substituted with a plant-based egg for vegan option.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • Cooking spray or olive oil for baking For coating baking sheet.

Preparation

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly spray it with cooking spray.
  • Grate the zucchinis and place them in a clean kitchen towel. Squeeze out the excess moisture.
  • In a mixing bowl, combine the grated zucchini, shredded cheese, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix until everything is well combined.
  • Form the mixture into small tot shapes using your hands, and place them onto the prepared baking sheet.

Cooking

  • Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy. Flip halfway through for even browning.
  • Serve warm as an appetizer or snack.

Notes

For the crispiest tots, squeeze the grated zucchini well to remove moisture. You can also try cooking them in an air fryer at 375°F for about 12-15 minutes. They can be stored in an airtight container in the fridge for up to 3 days or freeze for longer storage.
